I have a section in my book totally devoted to the science behind nutrition and what low-budget foods that actually give you that nutrition. I’ve also incorporated notes on how to augment that nutrition. I’ve pared down recipes to an essential recipe for low budget and then added to it and modified it based on current science for health. Also, I have added notes on what you can add to make particular recipe variations. So not just making it economical by planting your own vegetables, but also what you buy for meat, what you make for desserts and what you eat in a balanced way.

So far I’ve included foods for adult stem cell growth, lowering LDL bad cholesterol, probiotics and prebiotics. I’m working on spices and their chemical structure, foods for Alzheimer’s, and several other segments. By understanding the science behind what you’re eating, this book shows not only economically feasible recipes, but also economical use of time, and focused nutrition. I only included recipes that were quick and easy, in line with the concept of being economical both in time and money. I have a biology degree although I never used it in my career. So, if you’re truly into saving money by planting vegetables this tool will help you focus on your needs. Don’t waste time growing lettuce, grow kale and beet greens instead.
I’ve been growing vegetables since I was 12. I’m now 70. This is a diet my family ate. My mother lived to 96 and my grandmother to 93. It works.

I’ve been gardening since I was 8 and cooking since my mother let me into the kitchen. Certaining I have been eating this whole time and I love to eat, but I only weight 120-125 lbs. Ever wonder how that works? Well I did and when I hit some economic hard times I decided it was a good opportunity to find out. I kept researching and researching and compiling lots of information and then I decided to put it all together in my cookbook. My cookbook isn’t glamourous with lots of pretty pictures (except mine of course at 70). It is, however, packed with information and the search goes on so readers can continue to expand their knowlegdge of the latest science on nutrition. I connect the dots between the food we eat and the current scientific research.
